Shawarma. Karak. Paratha. Three things that have fed this city for decades, passed through car windows, eaten standing outside neon-lit cafeterias in Satwa with no ceremony. Chef Solemann Haddad and the team behind Moonrise Dubai Cuisine have a very different plan for them. The MICHELIN One Star restaurant at Eden House in Al Satwa has just launched a brand-new 6-course tasting menu dedicated entirely to Dubai Cuisine, putting the city’s most humble street food staples through a Michelin-caliber kitchen. If you have been waiting for a reason to finally book that Moonrise table, this is it.
A Dubai Cuisine Menu That Finally Looks Inward
Moonrise has always centered its identity on Dubai’s food story. Since opening in September 2021, Chef Solemann Haddad, who grew up in Dubai with French and Syrian heritage, has cooked through the city’s cultural memory rather than chasing imported trends. The restaurant’s existing 12-course omakase menu already nods to food court pasta Alfredo from the 90s and a foie gras pani puri with date syrup, saffron, and pineapple chutney. It has always been personal.
This new 6-course Moonrise Dubai Cuisine menu goes even closer to home. It draws from the streets and cafeterias of Al Satwa itself, the same neighborhood where the restaurant sits, and from the local cafe culture that fed generations of residents at a time when fine dining wasn’t part of the picture. Spicy shawarma gets an elevated treatment. Karak chai and paratha, two mainstays of Dubai’s cafeteria scene, go through the Haddad kitchen. The goal: a proper tribute to the local spots that gave this city its food identity and deserve far more credit than they usually get.
Why Moonrise Dubai Cuisine Pulls This Off
Not every restaurant can do something like this without it reading as a gimmick. Moonrise is one of the few that can.
Haddad has turned the rooftop of Eden House into the city’s hardest reservation. The restaurant holds a MICHELIN One Star from the 2025 MICHELIN Guide Dubai, and Haddad took home the 2022 MICHELIN Young Chef Award alongside Gault&Millau’s Future Great of the Year recognition. In 2026, Moonrise earned the No. 10 spot on MENA’s 50 Best Restaurants. He did it almost entirely self-taught, without classical mentorship dictating what Dubai’s food should look like on a fine dining plate.
The setup is a 15-seat chef’s table on the rooftop pool deck of Eden House, where every course gets plated in full view of the guests. Haddad walks the room, explains each dish, and tells the story behind it. That kind of intimate, personal format is exactly what gives a Dubai Cuisine concept like this the room to work properly. There is a real difference between a chef who grew up eating Satwa shawarma telling you about it course by course, and a restaurant that decided street food was a good marketing angle for the season.
What to Expect and How to Book
The Moonrise Dubai Cuisine tasting menu runs Tuesday through Sunday, with seatings from 5:00 PM to 9:30 PM. Six courses, each one an elevated take on a recognizable Dubai street food classic, put together by the same team that has already convinced Michelin inspectors and the World’s 50 Best that Satwa deserves a spot on the global fine dining map.
If you have ever had late-night karak at a cafeteria or a spicy shawarma from one of the old spots that has been around for decades, this menu is going to register differently. Haddad is not trying to recreate those experiences at fine dining prices. He is making the case that the food this city grew up on is worth a table, a proper kitchen, and a story.

Dubai’s fine dining scene has spent years showcasing what the rest of the world can cook. The Moonrise Dubai Cuisine tasting menu does the opposite: it looks inward, at the shawarma shops, karak stalls, and paratha counters that gave this city its real food culture, and puts them on the table properly. If a Moonrise reservation has been sitting on your list, this is the version of the menu to finally show up for.
